Quinoa Cookies

Quick and easy, this recipe is perfect for using up leftover cooked quinoa. Prepared in minutes, quinoa cookies are perfect for introducing quinoa to a young diet. Kids surprisingly love these cookies and are not shy about requesting them. Quinoa has long been considered a “super food”, rich in vitamins, minerals and dietary fiber. Vegetarians and those who are gluten-intolerant enjoy quinoa because it is the only whole grain that contains all of the essential amino acids humans need and is considered a complete protein.

Quinoa Cookies

1 cup cooked quinoa, cooled
1 1/4 cups old-fashioned rolled oats
1 cup sunflower seeds
1/2 cup chia seeds
1/4 teaspoon salt
3/4 cup chocolate chips
1/4 cup coconut oil
1/3 cup honey
1 teaspoon vanilla extract
Finely shredded coconut

Combine the quinoa, oats, sunflower seeds, chia seeds and salt in a bowl, stirring to mix well. In a large plastic or ceramic bowl, melt the chocolate chips and coconut oil in a microwave for one to two minutes. Periodically stop the microwave to stir the chocolate mixture, making sure that it does not burn. Stir the honey and vanilla extract into the chocolate mixture. Add the quinoa, oat, seed mixture and mix well with a spoon until the entire mixture is moistened. If the mixture still seems dry, add an additional tablespoon of honey. Scoop two ounce balls of the mixture and roll them between your hands. Roll the balls in the shredded coconut.
