Vegan and gluten-free lemon cookies

These vegan and gluten-free lemon cookies are delicious, perhaps even more delicious than their non-vegan and wheat based conterparts. They are also quick and easy to throw together and the dough balls can be frozen, pulled out of the freezer and baked on demand.

Vegan and gluten-free lemon cookies

1 1/3 cups almond flour
2 tablespoons gluten-free oat flour
1/8 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons lemon extract
1/3 cup maple syrup
1/4 cup coconut oil, melted

Mix the ingredients together in a large bowl until a dough forms.  Roll the dough into small balls, space them two inches apart on a parchment lined sheet pan and and bake in a 350 degree oven for 12-15 minutes until golden brown.
